π§ THE FORBIDDEN CHEESE. π§ (Why asking for Parmesan on Seafood is considered a crime in Italy π)
I have to warn you. Because I don't want you to get yelled at by a waiter in Sorrento. π±
There is an unwritten law in Italian cuisine that is stricter than the laws of physics: π« NEVER put Cheese on Seafood. π
I see it happen every summer. You order a delicious "Linguine alle Vongole" (Clams) or "Scialatielli ai Frutti di Mare". Then you look at the waiter and ask: "Can I have some Parmesan, please?"
The waiter freezes. The Chef stops cooking. The music stops. π
Why do we hate this so much? It is not because we are mean. It is because of CHEMISTRY. Seafood has a delicate, salty, mineral taste (the taste of the sea). Parmesan (or Pecorino) has a strong, fatty, overpowering taste. If you mix them, the cheese KILLS the fish. You are paying €25 for fresh seafood, and you are making it taste like... cheese.
"But Sal, I like it!" I know, I know. Comfort food. ❤️ But in Italy, the Chef feels insulted. He thinks: "I worked hard to make this fresh sauce, and you want to bury it."
π‘ MY ADVICE: Be brave. Try the pasta without the cheese first. Taste the ocean. Taste the garlic. Taste the parsley. If you really, really need the cheese... ask for it politely. (But whisper it, so the Chef doesn't hear you! π€«)
