How to make Spaghetti alla Carbonara πŸ”₯

You can skip it

No need to oil the pan because the guanciale releases oil as it cooks making deliciously crispy bites. You can skip extra seasoning, too, because the pork is already so flavorful.


Equipment

🟠  Knife small

🟠  Cutting board

🟠  Pot (for boiling spaghetti) Large. 

🟠  Pan

🟠  Wooden spoon

🟠  Mixing bowl Large

🟠  Mixing bowls Small

🟠  Whisk

🟠  Tongs




Ingredients

🟠  300 grams Spaghetti quadrati, 10.5oz

🟠  200 grams Pecorino Romano cheese, 7oz

🟠  300 grams Guanciale, 10.5oz

🟠 4 eggs, 3 egg yolks + 1 entire egg

🟠 Black pepper






Instructions

1. Start by removing the skin of the guanciale – not the fat, just the skin. (I really hope you can find the guanciale because it makes the dish sing!)


2. While you are cutting the pork, bring 5L of water to a boil. No need for salt in this recipe! The pecorino cheese is salty enough.


3. Cut the guanciale into large strips then smaller ones all with fat on each side and delicious meat in the middle. When it cooks, it will be crispy on the outside and nice and tender on the inside.


4. Add the pasta into the boiling water (NOTE: No salt!) and lightly push it down for the first 30 seconds to cook the pasta evenly.


5. Next, put your guanciale into a large pan on medium-low heat, continuously stirring, so it doesn’t burn.


6. It’s time to make the sauce, so grab your eggs and get cracking! Make sure to separate the egg whites and yolks from 3 eggs – keeping the yolks in the large mixing bowl.


7. Whisk your eggs until they are mixed and light. Once you have done this, don’t forget to collect a mug of pasta water for extra creamy spaghetti alla carbonara.


8. Only add ½ of the pecorino cheese into the eggs with a splash of reserved pasta water, then mix. Once the cheese mixture is combined, add in the rest of the pecorino, and continue whisking until you get the perfect, thick carbonara sauce.


9. Take half of the crispy guanciale out of the pan and set it aside.


10. Using a set of tongs, transfer your al dente pasta from the pot right into the pan with guanciale. It’s okay if some water comes with it; it will help make the sauce creamier later.


11. Stir, stir, stir! Then add a splash of pasta water; this helps make sure the egg does not cook into scrambled eggs. Continue stirring for a few minutes.


12. Remove the pan from medium heat and add your carbonara mixture to the hot pasta with another splash of pasta water. Continue stirring until you get a super creamy spaghetti carbonara.


13. You don’t want to miss out on any of this sauce – add your pasta back into the large mixing bowl and stir until all the egg mixture is covering the pasta. MM-MM!


14. Add a large amount of black pepper onto the spaghetti alla carbonara, stir, then add even more and stir again.


15. The finally and most important step is tossing the spaghetti in the large bowl; this helps make it even creamier.

The cuoppo: a mixed fry of both land and sea products

The real king of Neapolitan fried food is the cuoppo, consisting of a conical wrapper containing the most incredible delicacies you can think of. The cuoppo exists in two variants, the "land" one and “of sea”. The mythical cuoppo is not only a street food product, but it is also often prepared in pizzerias and restaurants, as a light appetizer to be followed by the main courses. However, when you are quite hungry after having taken a walk around the city, or after having visited one of the cultural places and museums Naples is rich in, cuoppo could be a quick dinner that will overwhelm you with taste and fill you with the energy needed to take part in the evening movida. In the cuoppo of land can not miss: potato crocchΓ© stuffed with cheese and ham, zeppole of grown pasta, the famous fried pizzette known as montanare, zucchini flowers stuffed with ricotta and fried, the legendary scagliuozz, pieces of fried polenta in the shape of a triangle, arancini rice. In the sea cuoppo instead cannot miss squid and shrimp rings, seaweed fritters and various fried fishes, of which perhaps the most famous are the so called fravaglietti, that is the fried mullet fragaglia.

EGGPLANT PARMIGIANA : A typican neapolitan dish history + best in town

The eggplant: the history of a new food in Italy

Mediterranean cuisine and all Italian cuisine is famous all over the world, its evolution during the years and its integration with new ingredients during the centuries are unique.

A very common food such as eggplant arrived very late in Italy, this vegetable arrived in Italy with the invasion of the Arabs in the fifteenth century.

The first literary discovery on eggplant comes from the city of Naples, a recipe in a book that is most similar to today's recipe of eggplant parmigiana. The text dates back to 1839 and is written by Ippolito Cavalcanti, the title is ''Cusina casarinola co la lengua napolitana''.

I quote the words of this text: "And you will fry the eggplant and then arrange them in a layer-in-layer pan with the cheese, basil and stewed broth or with tomato sauce and covered will make you stew". Eggplant parmigiana is in the history of this city.

Naples is the city of the street food... and also the slowfood: the 'recipe' of aubergine parmigiana



Naples is one of the most important cities for streetfood in Italy but also for slow-food, the city is full of trattorias and small restaurants in every corner. The eggplant parmigiana is definitely a slowfood, the Neapolitan recipe is definitely something to try on your trip to Naples.

You will find the eggplant parmigiana integrated in many recipes: on pizza, in sandwiches and in traditional cuisine. A very tasty dish but not light, after you'll eat parmigiana... you will need a walk for burn the calories of parmigiana.

Eggplant, parmesan, tomato, fior di latte (a type of cheese), basil... straight in the oven and you'll fall in love with this Neapolitan recipe.


The origins of Aubergine Parmigiana

The parmigiana di melanzane battle between the women in the kitchen is a neverending story, but a kind of peace could arrive from the reason why parmigiana originated not in Campania or in Sicily, but in Naples, exactly in the Kingdom of the Two Sicilies and so both in Naples and Palermo; otherwise, there are sources about a probably Greek or Arabic origin. The parmesan cheese is not the reason why of the name of this typical and irresistible Neapolitan dish. Two are the possibile origins of the name “parmigiana”:

🟠  the Sicilian shutter with overlapping wood sticks called “parmiciane” such as the eggplants of the parmigiana;

 πŸŸ  the origins of the name Parmigiana are from Parma, where the ancient culinary tradition used to prepare some recipes with overlapping vegetables alternated with other ingredients.

The first official parmigiana di melanzane recipe appeared around 1837 in Naples thanks to Ippolito Cavalcanti who published the recipe book “Cucina Teorico  Pratica” suggesting the recipe of “Milinsane alla parmigiana”: slice the eggplants and put them in the salt; then, fry and put them in a baking pan with breadcrumbs, parsley or “petrosemolo”, salt, pepper and oil and bake for a while. Today, the parmigiana eggplants is cooked in the same way with the addition of provola or mozzarella and basil.

Where To Eat In Positano 

Aside from the beaches, beach clubs and cliffside houses, it is known for having the most picturesque views in the country with several iconic landmarks and an incredible dining scene. Whether you are in Positano for just the afternoon or multiple days, I have compiled a list of restaurants, cafes, and bars that will cover all your bases. One of my main priorities during my Positano list is to visit a few spots with photo-worthy views, so I’ve made sure to include a lot of those in here! 


Important note: I highly recommend making reservations ahead of time for the more popular sit-down restaurants if you are able to.This is not required everywhere, but I would at least recommend arriving early as most places fill up quickly.

My number one tip would be to make a reservation in advance and request outdoor seating with a view to get the full experience.

Getting there early is not a requirement if you don’t care about having a front-row table or don’t mind a wait, and it is a great spot to grab a drink either way!

You can take in the atmosphere and admire the stunning views with a relaxing day at the beach in positano.. Two notable beaches in Positano are Spiaggia Grande and Fornillo Beach. The main beach, Spiaggia Grande, also known as Marina Grande Beach, is perfect for people-watching and soaking in the vibrant atmosphere. The beach is lined with cafes and restaurants where you can enjoy a meal with a view. It’s also the main departure point for boat tours, making it a hub of activity. 


Spiaggia Grande is known for its iconic location at the bottom of the vibrant cliffside. You can rent  chairs here for the day and enjoy sipping on cocktails while laying in the sun. I recommend getting there early for your top choice of spot and a smaller crowd. You can also avoid crowds and have more privacy at one of the many beach clubs.


If you’re looking for a more laid-back beach experience, Fornillo Beach is the place to go. A short walk from the heart of Positano, it offers a more tranquil environment compared to the bustling Marina Grande. Here, you can soak up the sun, swim in crystal-clear waters, and enjoy a more relaxed vibe. 



🟑 To do Shopping in Positano 

At the end of the 1950s, the small fishing village of Positano started becoming one of the most sought-after destinations for visitors looking to experience "la dolce vita". That’s when Positano fashion began to emerge, influencing not only the look of the tourists who crowded its beaches, but also that of the international jet set. It all began with pezze: hemp and cotton fabrics hand-dyed in bright colors. You  would adore the hotel , Casa Albertina  . The views are  great, the location is ideal, and it has a fantastic breakfast you can enjoy on their terrace balcony. The staff is fantastic as well! 


For a touch of luxury, consider staying at Le Sirenuse , one of Positano’s most famous hotels. With its breathtaking views of the Amalfi Coast and impeccable service, it’s a splurge that’s worth every penny. Even if you’re not staying here, you can visit Le Sirenuse’s restaurant, La Sponda, for an exquisite dining experience.

🟑 Hike the Path of the Gods (also known as Sentiero degli Dei)

If the stairs already all around town were nothing to you then this is an activity you will enjoy! For those who enjoy outdoor adventures, hiking the Path of the Gods is a must. This scenic trail offers stunning views of the coastline and provides a unique vantage point of Positano from above. This scenic mountain trail is approximately 4.5 miles long and takes about 4 hours to complete.

Visiting a beach club is a quintessential Positano experience. Positano is home to several chic beach clubs where you can rent a sunbed, enjoy a refreshing drink, and savor some delicious food. I always stay at Spiaggia Grande Beach Club during my  visit as it is easily accessible from the town. It’s highly recommended to make reservations in advance during the high season (May to September).


🟑 Visit a Rooftop Bar

There are many rooftop bar options to choose from in Positano. A rooftop bar is the perfect spot to relax and take in the natural beauty of Positano. The very first spot i go  after arriving (well, second if you count coffee) is  Franco's Bar  ! I recommend arriving right when they open for the evening to get a front-row spot there. It’s hard to beat enjoying the sunset over the sea with a cocktail.


🟑  Sip on Some Limoncello and Lemon Sorbet

The Amalfi Coast and Positano are known for their abundance of lemons, and while in Positano, sampling the Limoncello is a must-do experience. Limoncello is a traditional Italian liquor derived from blending simple syrup, alcohol, and lemon zest. It is usually served in a shot glass but is meant to be drunk slowly to fully appreciate it. Limoncello is often served at restaurants after you finish dinner and pairs well with desserts. 


You can also enjoy it as a Limoncello Spritz. Lots of the local shops and bars have samples available and can package a bottle for you to take home. Don’t forget to enjoy some other lemon desserts like Positano’s famous lemon sorbet. 


🟑 Plan a Day Trip to Amalfi and Ravello 

While Positano is enchanting on its own, a day trip to nearby Amalfi and Ravello is a great way to explore more of the Amalfi Coast. These towns offer their own unique charm and are well worth a visit.

🟑  Visit the Church of Santa Maria Assunta 

The Church of Santa Maria Assunta is a must-see when visiting Positano. Its striking dome, adorned with colorful tiles, is one of the town’s most iconic landmarks. Inside, you’ll find beautiful frescoes and a serene ambiance that’s perfect for a moment of reflection.


🟑 Day Trip to Capri

Capri is a luxurious island in the Tyrrhenian Sea and a top tourist destination. It is home to upscale fashion and dining. It takes about 40 minutes by boat from Positano and there are many ferries and boat tours each day. If you are visiting the Amalfi Coast or Positano for a few days or more, I recommend taking a day trip to Capri.

🟑 Use the SITA Bus for Exploring 

To explore beyond Positano, the SITA bus system is a convenient option. It connects Positano with other Amalfi Coast towns, making it easier to discover more of this beautiful region without the hassle of driving.


🟑  Savor Local Cuisine 

No visit to Positano is complete without indulging in the local cuisine. From fresh seafood to delicious pasta dishes, there’s no shortage of fantastic places to eat in Positano. Be sure to try some local specialties and enjoy the vibrant flavors of Italian coastal dining.


🟑  Enjoy a Romantic Dinner in Positano 

There are many fine dining options in Positano that are perfect for a memorable evening. I enjoyed a lovely evening at both Bruno Ristorante and Da Vincenzo during my most recent visit, which was some of my favorite spots.

🟑  Experience the Nightlife 

The nightlife is definitely more laid back than the large cities but makes for a lively evening. Most places around the town are stylish cocktails bars with a smart casual dress code. Recommended spots include Le Sirenuse Champagne Bar, Music on the Rocks, Bar Bruno, and Il Tridente.

🟑 Pick Up a Souvenir From Art & Craft Gallery

Giancarlo Angeloni’s art gallery  - Giancarlo Angeloni -  in the heart of Positano is probably my favorite shop ! The owner is so nice, and he took the time to help me pick out the perfect painting. I collect paintings during my travels, so this was very special to me to be able to meet the painter himself. The paintings varied in canvas size and offered all different views of this beautiful city.


🟑 Take A Cooking Class

Positano offers several excellent cooking classes where you can immerse yourself in Italian culinary traditions. Below are a few popular Positano cooking classes:

🟑 Visit the Positano Fruit Stand 

Salvatore Milano’s lemon stand is located on the roadside on the outskirts of Positano and can be reached by taxi or scooter. His fruit and vegetable stand has become Instagram famous, winning the internet over with its charm. He is so nice when we stopped by and offered to take my girlfriend  photo by his decorated stand. If you are going to take photos, be respectful and purchase something from the stand or even provide a tip. We ended up buying some fruit while there to bring back to our hotel and it was great!


🟑 Watch the Sunset or Sunrise Over Spiaggia Grande

Positano is known for it’s stunning views, and sunset or sunrise is no exception! Make  sure to wake up early to enjoy at least one sunrise and also plan yur meals with views around experiencing sunset.
